This unique form of rolling traps the delicate flavor and releases it very slowly. Yields 3 good infusions. Beautiful tea to steep in glass teapot to view the unfurling of the leaves. When the leaves reach the bottom of the pot, the tea is ready to drink.

American style brew: steep 1 teaspoon of loose tea per 6-8oz. of below boiling water, 180°F, for 4-7 minutes.

Gongfu style brew: steep 2 teaspoons of loose tea per 6-8oz. of below boiling water, 180°F, for 30 seconds. Re-steep consecutive times adding 30 seconds each brew.
